It's not just elderly people who want things to be easy. It's almost
everyone.
With newer versions of Linux, my experience has been that it's not
necessary to use the command line very often, but it is necessary to use
it sometimes.
The command line is not hard to use... as long as you type commands
exactly right.
In this case, I think the command will be: umount /dev/sda1
To start the command-line interface, type control+alt+T all at the same
time.
The eee seems to have a simplified desktop that is missing the feature
you want. Here is a page that tells how to put a more complete desktop
on your eee:

I believe if you follow those instructions, you will end up with a
desktop that displays an icon whenever you plug in your thumb drive, and
you will be able to right-click on that icon to disconnect the thumb
drive before removing it.
